Chocolate Day Chocolate Cake

If you are a chocolate lover, you’re in luck! Today is World Chocolate Day and it’s the perfect excuse to indulge in your favourite sweet treat. Chocolate makes up such a big part of our lives, it’s no wonder chocolate has its very own day marked on the calendar!

Many of us would admit we probably eat a little too much chocolate and that probably has to do with chocolate’s ability to make us feel good. Chocolate contains tryptophan, which can produce serotonin, the hormone that regulates our mood. Scientists also believe our bodies release endorphins after eating chocolate because we’re satisfying our cravings. No wonder eating chocolate is such a good time!

Indulgent Chocolate Day Chocolate Cake

Serves 10

Ingredients

Cake

1 cup of plain flour

1 cup of sugar

1 egg

½ cup of milk

5 tablespoons of unsweetened cocoa

1 teaspoon of baking powder

¾ teaspoon of baking soda

½ teaspoon of salt

½ teaspoon of instant coffee

¼ cup vegetable oil

1 ½ teaspoons of vanilla essence

½ cup of boiling water

Icing

¾ cup of softened butter

½ cup of unsweetened cocoa

2 ½ cups of icing sugar

1 ½ teaspoons of vanilla essence

¼ teaspoon of instant coffee

Method

  1. Preheat the oven to 175 degrees Celsius and grease a 20cm cake pan.
  2. Combine the flour, sugar, cocoa powder, baking soda, baking powder, salt and the instant coffee in a large bowl. You can mix it yourself or use a mixer.
  3. Add the milk, eggs, vanilla essence and vegetable oil to the flour and mix until well combined.
  4. Slowly add the boiling water to the mixture while mixing well.
  5. Pour the batter into your prepared cake pan and place the cake in the oven for 30 to 35 minutes.
  6. Prepare the icing while the cake is cooking. Combine the softened butter and the cocoa powder.
  7. Gradually add the icing sugar and the milk to the butter mixture until well combined.
  8. Add the vanilla essence and instant coffee to the mixture.
  9. Allow the cake to cool before icing the cake.
