Fajita Recipe

It's International Fajita Day! Here's a delicious fajita recipe you can cook in class with your Food Technology students or at home!

Today is International Fajita Day! Fajitas are a staple Mexican dish that we love here in Australia. Many of us have our own special ways of making fajitas at home to accommodate everyone’s taste preferences but that means many of our students may not have tried a more traditional tasting fajita. So, we’ve developed a kid-friendly fajita recipe which you can cook with your cherubs this International Fajita Day!

Fajita Recipe

Serves: 2
Time: 35 minutes
Ingredients
1/2 tsp ground paprika
1 tsp ground cumin
1/2 clove garlic, crushed
1/2 lime, juiced and rind finely grated
1 chicken fillet, sliced into strips
1 tbsp olive oil
1/2 red onion, sliced
1/2 capsicum, sliced
2 tortillas
1/2 tomato, chopped
1/4 cup grated cheese
1 cup cabbage, shredded
1 tsp dried coriander
1/2 cup sour cream (optional)

Method
1. In a bag, place the paprika, cumin, garlic and lime rind inside and shake to combine. Add the chicken strips and toss them through the spice mix to coat.
2. In a large frying pan, heat 1/2 tsp of olive oil before adding the coated chicken strips. Cook for 5 minutes or until golden brown and cooked through. Remove the chicken from the pan.
3. Heat the remaining oil in the frying pan. Add the onion and capsicum and cook for 3 to 5 minutes until just softened. Remove from the heat.
4. In a small bowl, combine the tomato, coriander and the lime juice to create a salsa mix.
5. Place the tortillas on a plate then add the cooked chicken strips. Top with the capsicum and onion mix, salsa mix, cabbage and cheese. Add a dollop of sour cream if you desire.
6. Fold the fajita by folding the bottom up around halfway up first, then fold in the left and right sides one at a time. Serve and enjoy!
