Healthy Fish and Chip Recipe

It's International Fish and Chip Day! Tempt your students into trying takeaway alternatives with this healthy fish and chip recipe!

Today is International Fish and Chip Day! Fish and chips are a staple of our takeaway landscape here in Australia. Many of us can’t resist a good serving of fish and chips, even though it’s not the most nutritious meal! But we can always cook it ourselves and make it that little bit healthier. Here is a tasty but healthy fish and chip recipe to cook with your students. This recipe will make them want to cook healthier versions of their favourite takeaway dishes all the time!

Healthy Fish and Chip Recipe

Serves: 2
Time: 40 minutes
Ingredients
1 large sweet potato
1/2 a cup of bread crumbs
1 egg
2 basa fillets
2 tsp of mixed herbs
Spray oil
A pinch of salt

Method
1. Preheat the oven to 230 degrees Celsius.
2. Cut the sweet potato into small wedges. Line a baking tray with baking paper and place the sweet potato wedges on the tray. Spray the wedges with oil and sprinkle 1 teaspoon of mixed herbs over the top. Place them in the oven to bake for 15 minutes.
3. Combine the breadcrumbs and remaining teaspoon of herbs in a bowl and crack the egg into a second bowl. Whisk the egg to make an egg wash.
4. Prepare a second baking tray by lining it with baking paper.
5. Dip 1 basa fillet in the egg wash before dipping it in the crumb and herb mixture. Place the fish on the second baking tray before repeating the process with the second fillet. If you have egg allergies in the class, simply place the fish fillet in aluminium foil without the egg wash and crumbs before placing it on the baking tray.
6. Place the fish fillets in the oven and bake for 10 minutes or until the crumbs are golden and the fish is cooked through.
7. Remove the fish and sweet potato wedges from the oven once they are cooked. Serve the fish and wedges on a plate and season the wedges with a pinch of salt.
