Lockdown Lunches

Lockdown gives us the perfect opportunity to make our normal school lunches a little more exciting, so here are 8 tasty lockdown lunches!

Lunch at school is usually a boring affair. You probably take a soggy sandwich in your bag because you don’t have time to take a proper lunch break, or you stand in line for what feels like hours to use the sandwich press in the staffroom. But we’re in lockdown and we’re teaching online, so it makes sense to make the most of all the conveniences that being at home offers us, including using our own kitchens. So, we’ve got 8 ideas for tasty lockdown lunches that are sure to make working from home seem even more exciting!

Gourmet Sandwiches

With heaps of yummy foods at your fingertips in your own home, lockdown may be just the perfect opportunity to jazz up your normal sandwich! Consider adding ingredients such as salmon, sundried tomatoes, pickled onion, a yummy sauce or even different varieties of cheese to take your sandwich game to the next level during lockdown.

Mini Pizzas

It’s so easy to whip up a quick and simple pizza for lunch while you’re at home! Grab some small pizza bases or pita bread, spread over a layer of tomato paste and top with spinach, tomato, olives, capsicum, some meat if you choose and a bit of cheese. Place it in the oven until it’s golden and you’ve got a perfectly quick and simple mini pizza for your lockdown lunch!

Wrap Melts

Wrap melts became popular on social media last year and now that you’re spending more time at home, you’ve got the perfect opportunity to try one out yourself! Simply put all your ingredients in a wrap and fold it up before cooking it in a sandwich press or in a frying pan. These make for fantastic lockdown lunches on those colder days!

Smashed Avo on Toast

Smashed avo on toast is a breakfast favourite but why not enjoy it for lunch, especially when you’ve got access to your own toaster?! Toast up your favourite bread and smash up an avocado but also consider adding a poached egg, grilled chicken, feta cheese or a couple of slices of tomato to make it a truly satisfying lockdown lunch.

Microwave Cup Quiche

Grab an egg, cheese, any other ingredients you please and a coffee mug to whip up a tasty, single-serve quiche in just a few minutes! Follow this recipe for a quick and easy lockdown lunch!

Ham and Cheese Scrolls

Ham and cheese scrolls are a delicious and simple lunch you can enjoy in lockdown while you’re home to keep an eye on the oven! Spread some tomato paste and sprinkle ham and cheese over a piece of pastry, roll it and slice it up before baking it in the oven until golden. Kids love these too, so they make for perfect lockdown lunches if you’re trying to home school your own little cherubs too!

Tuna Tacos

Craving Mexican? Why not try some quick and easy tuna tacos for one of your lockdown lunches? Simply grab some taco shells, a can of tuna, some Mexican salsa and any other toppings you may like, put them together to create a quick and tasty Mexican lockdown lunch!

Mini Roast

Seeing as you’re at home, why not whack the oven on and cook yourself a roast lunch! Grab a mini roast and any of your favourite vegetables from the supermarket, then all you need to do is season the meat, chop the vegetables and place it in the oven before class starts. Then by lunch time you’ve got a delicious and healthy hot lunch waiting for you. Even better, you may have some roast meat leftover, which will be perfect on a sandwich the next day!

We hope these ideas have inspired you to add a bit more pizazz to your lockdown lunches!
