Teaching “The Cake Life” (& Other Made-Up Careers)

Katherine Sabbath is a proud home baker, enthusiastic cake teacher, and self-published cookbook author. Once a high school History, English, Commerce, & Geography teacher, she has always been a self-confessed sprinkle-covered, sticky-fingered, bake-aholic! Her love for experimenting with new flavours and dessert concepts led Katherine to pack up her high school teaching textbooks and dive head-first into what she likes to call, “The Cake Life” full-time in 2015.

 

After joining Instagram in early 2013 and sharing photos of her creations and snapshots of her life, Katherine rather serendipitously has attracted a community of more than 497,000 home bakers and fans worldwide! There are even a number of devoted cake enthusiasts sporting Katherine Sabbath cake tattoos! This overwhelming social media success is what prompted Katherine to move on from her role as a high school teacher, to focus her creative energy into a career filled with cakes, food innovation, and fostering the home baking community.

At the end of 2016, Katherine launched her first crowdfunding campaign on Kickstarter to raise funds for her debut self-published cookbook, “Katherine Sabbath – Greatest Hits – The Pop Edition”. Released in 2017, it has now sold out of its first print run of 5000 copies and currently into its second print run.

In 2018, Katherine was invited to appear on Australia’s most respected cooking show, MasterChef, as a guest judge during “Sweet Week”. Contestants were challenged in a Pressure Test to recreate her now iconic “Birthday Cake”, which has since been recreated by budding MasterChef’s across the country and internationally.

Currently in 2019, Katherine is working on her second cookbook with Murdoch Books (due to be released in October), and is looking forward to further supporting her home baker friends worldwide!

Dr Vanessa Pirotta is a dynamic, young professional excelling in her field of marine science. Vanessa has led pioneering and collaborative research into the use of emerging technologies such as drones for whale conservation. Vanessa’s research also uses cross-disciplinary approaches to rethink global shipping impacts on marine giants such as whales, basking and whale sharks. Whale research has taken Vanessa around the world including Tonga, Antarctica and Madagascar. Vanessa is also a passionate science communicator and recipient of national and international science communication awards, having represented Australia on the global stage. Vanessa frequently engages in school outreach and participates in the Skype-A-Scientist program internationally. Vanessa’s science communication skills are desirable for expert comment relating to the marine environment for various media outlets such as the ABC and CBS News in America.

Susie Burrell is one of Australia’s leading dietitians, known for her extensive background in both nutrition and psychology and for her practical, easy to understand approach to diet, nutrition and wellbeing.
Early in her career, she spent almost 10 years working at The Children’s Hospital and with elite sporting teams including the St George Illawarra Dragons and the South African Blue Bulls where she gained much applied experience working with children, families and elite athletes.
Susie is currently the resident dietitian on Channel’s 7’s SUNRISE and has a weekly radio segment on the top rating 2GB Afternoon Program with Chris Smith. Susie has a weekly column on news.com.au and runs the online weight loss program – www.shapeme.com.au.
Currently Susie is also completing a Master’s Degree in Coaching Psychology at Sydney University. Loves going on long walks around Sydney and is kept pretty busy with her 3 year old twin boys, Gus & Harry.

Building STEM Equity (Engagement & Empowerment)

 

Peggy will discuss the unique challenges faced by female, Aboriginal and low-SES students in STEM subjects with tips and ideas to increase engagement through empowerment and breaking down barriers. A profile of successful projects throughout NSW will highlight STEM education as a conduit for building equitable access to future focused learning and career pathways. Peggy will also speak about the strategies she uses to build teacher confidence, skills and knowledge in STEM tools and pedagogy.

Peggy is an innovative STEM educator and avid Maker with a passion for developing equitable and real-world learning programs. As an experienced curriculum leader, she utilises strong foundation skills as Technology Applied Studies teacher to develop integrated, hands-on learning opportunities with a focus on increasing engagement for low-SES, Aborginal, female and regional students. 

 

Peggy’s pre-teaching career as a Software Engineer and Media Designer provides an insight and framework into future focused skill development for both students and teachers. She is somewhat infamous in the Hunter region as being ‘fiercely dedicated to increasing Girls in STEM and supporting educators to improve their confidence and skill for STEM pedagogy and tools through practical, affordable and fun strategies’. She personifies a ‘Play with Purpose’ and growth mindset model for all learners. 

 

Peggy has worked across a variety of educational settings, including public, private, remote, urban, low-ses and affluent schools. She also has varied experience in executive and senior executive leadership where she developed a reputation for reducing workloads through efficient systems. However, her first love has always been curriculum development and authentic professional learning programs. 

 

Peggy currently has two roles leading innovative regional STEM programs. As the Head Teacher of STEM for Cessnock Academy of STEM Excellence (CASE) she supports five primary schools and a high school to coordinate integrated STEM curriculum development, teacher professional learning and STEM competitions. As the  Hunter STEM Project Officer for the STEM Industry in Schools Partnership (SISP), Peggy works at a regional level to facilitate a pilot STEM program that is now being delivered across five regions in NSW. Both CASE & SISP have recently been recognised at state and national level for excellence in STEM education. Peggy recently became the first Global Certified TETRIX Max and TETRIX Prime educator for Pitsco robotics.

Dessirae Luther-Sproule

Food Technologist – Food Product Development and Quality Assurance Consultant

Dessirae Luther-Sproule runs her own Food Technology Consulting business called QualDes.

QualDes offers services to the food industry in Product Innovation and Quality Assurance.  Dessirae started her business over 25 years ago and during this time has developed a multitude of food and beverage products, and assisted food companies to get their products to market faster.

From developing award winning Ice Teas to reducing production downtime by 80%, Dessirae has assisted food companies in many ways. 

 

With a broad knowledge of the Australian Food Standards and other nationally recognised food safety standards, Dessirae can ensure product labels conform and food safety audits are passed.  

Dessirae started her career working for large food manufacturing organisations, and was the Product Development and Quality Assurance Manager at Cerebos and Goodman Fielder. 

Dessirae obtained her Food Technology Degree (Bachelor of Applied Science in Food Technology) from the University of Western Sydney.  She first decided she wanted to be a food technologist when working on a production canning/retort line.

 

In her spare time Dessirae loves cooking, cheese-making and gardening in which she has won awards for her acreage garden.  She also has a fondness for collecting teapots and Armani figurines!

Food Additives – why we need to be additive aware.

 

Today’s supermarket is exploding with food choices! But not everything in there, is what it seems. And that even means many of the ‘healthy foods’.
Food additives are used to prolong the shelf life of food, and improve appearance and flavour.

 

Around 65 of the 300 chemicals used in our food supply in Australia have not been fully tested for safety. This means they have not been tested for how they interact when mixed together, how they interact when in the human body, their effects on hormones, or on brain development.

Artificial colours, flavours and preservatives can cause a range of health and behavioural problems in children, which means these additives are not as innocent as some manufacturers want us to believe.

Ruth is in private practice in East Maitland NSW with expertise and qualifications in child and family health. She consults in nutritional and herbal medicine and is also a public speaker, trainer, educator and advocate for low-to-no-additives in our diet.

 

Ruth has been working in the field of ADHD and learning difficulties for over 10 years now, firstly as a Neurodevelopmental therapist, but then focusing primarily on nutrition, and food as medicine as she recognised just how foundational diet is for kids who are struggling.

With adults the focus is more on the gut-brain connection, and how gut health affects mood, stress and sleep.

Carly is the founding director of Teacher Professional Development Pty Ltd. This NSW Education Standards Authority (NESA) registered professional development organisation provides world class resources and courses to primary and secondary school teachers, particularly Food Technology teachers.

Carly’s passion for food started at a young age and resulted in her studying and teaching Food Technology to students for 15 years in a variety of schools in Australia and the UK. Carly is a lecturer and tutor at the University of Newcastle (UON) in the School of Education and the School of Architecture. She won the Outstanding Casual Academic at UON for providing an exceptional student experience and demonstrating excellence in her role.
